Lavender Mint Tea

February 12th is Hot Tea Day.  For those who know me well, experimenting with herbal tea is a fun passtime.

This recipe for Lavender Mint Tea was inspired by a visit to the RED TEA BOX, an institution on Queen Street, in Toronto.  I went with my son and his girlfriend and we drank tea from bone china cups and mis-matched dinnerware.  This tea was a favourite served with tea biscuits and raspberry jam.

The combination of lavender and mint is recommended as an aid to digestion.

Lavender Mint Tea

·         1/2 cup Mint Leaf

·         2 Tablespoons Dried Lavender 

Mix all and store in an air-tight container.

Bring water to boil. Let cool 30—45 seconds.

Place  1-2 tsp per cup of water into a paper tea filter or a tea ball.

Pour boiled water over the tea. Let steep for 5 minutes.

Serve.

Optional: Serve with a slice of lemon and or honey to taste.
